Ingredients for Mixology drinks?

So, my sim has mastered mixology. Yet a while ago, I sent her out to the grocery store to get different types of fruit as I noticed there is a 'stock' interaction for the mixology bar.
She bought about 20 of each fruit and stocked the bar. She has been practicing making drinks and creating her own unique drinks, yet the fruit isn't getting used up. Why can you stock the bar with fruit then?

I'm sure I've seen it somewhere when a sim has been making a drink that they can choose the ingredients for the next drink.. But for some reason, my sim can't do that. Is there a reason why and a way to choose the ingredients for her drinks? If it's any help, this is all on her home lot, not a community lot.
