I really don't like my elders only having white/grey hair and only some of the hairs are binned so that elders can have colored hair too.
Is there a way I can do this?

This is something that has to be done manually, for all the hairs you want to do it to. It is possible to do with SimPE, though it's not easy unless you know your way around it a bit. You can also recreate each hair with Bodyshop and make them custom, and then rebin.
Some creators upload hairs with colored elders, though. Might help to look for those hairs. I've seen quite a lot of "pookleted" hairs like this at Garden of Shadows and several of the livejournals/dreamwidth sites of resident GoS creators --> http://www.digitalperversion.net/gardenofshadows/index.php?board=19.0.
Snapun has a lot of recolrosd, so if you're lucky, she does this to her hairs: http://snapun.livejournal.com/
For separate, custom (not binned) files you can use this: http://www.modthesims.info/download.php?t=434016 (for custom-binned hairs, don't think it works for already binned files).

Thank you so much for the links simmer22, I wish I could remember where I got all my old hairs from my first game before installling so this will help a lot :)
Also I am familiar with SimPE and feel comfortable using it if you know of a tutorial that I can use.

If you want a coloured hair for elders [Natural or dyed] you need to enable it for elders first. So for example, if you have a black hair that has grey hair for elder, you could open it up in simPE and just connect the elder age to the normal coloured textures.
To do that just go in SimPE, Material Definition and then change the "stdMatBaseTextureName" to reference to the normal colour instead, then you can delete the elder textures too. It's kind of easy but if you wanna do that with a lot of hairs it might take a while though.
Also, if the elder stage is deleted [In the property set] then referencing wont help.
Hope you find what you want :) I know a lot of people enable coloured hair for elders especially if it's dyed hair. So it might worth a shot searching google for a pookleted version of the hair you want cause she's got a lot of custom colours that are also enabled for elders by most people.
