I looked through the tutorials but couldn't find anything relating to this -- can university dorms be built on beachfront lots?

I've never tried it, but I don't see why not. I imagine you'd start with an empty residential lot (just of the beach lot variety), build it however you want it, and change its zoning to that of a dorm.

This is exactly how I have done it in the past and it works just fine:)

maybesomethingdunno and motheranne - thanks. I thought I remembered reading that apartments on beach lots were problematic so I wasn't sure about dorms.

Beach apartments are problematic because each occupied apartment consists of multiple lot files. This isn't true for dorms, so you should be safe.
