I have an object that I want to make into a default replacement, how do I do this?
I already have it out of s3pe and I'm sure I'll be told I have to do something when bringing it out of there.

Default replacements are generally as easy as using the same TGI (that is, type, group, and instance) as the item you want to default replace. So if you want to replace a mesh, find the original mesh from the game, note its TGI, and use the same TGI for the mesh you want to replace it with (very easy to change in S3PE - just look at the details of the resource and type the numbers you want to use). Same goes for XMLs, CASParts, DDSes, pretty much everything. You may want to make note of whether the original was compressed or not too - sometimes that matters.
There are -some- exceptions to this, things that can't be done with TGIs, but those are fairly rare. The only ones I know about are resources with the same TGIs that can be found in each .world file - like the resources for the routing for Bridgeport that I uploaded. But for most stuff, that won't be an issue.

Thanks for that HP, I thought it would be something like that. I'll have a look and see if I can get it to work.
Just one thing though, if I'm pulling it out of s3oc, do I untick renumber internally?

Yes, untick the renumber. Otherwise this will renumber all instances in your package and it won't be an override.
