I have all the EPs from base game right up through Pets. I've noticed that some kinds of venues are absent, and I was wondering if anyone can advise me what sort of changes to Appaloosa Plains you might recommend? Should I add a high rise? Where? More drinking venues? Parks? What changes did you make?

That is a personal decision. For me, high rises don't see to fit into the Appaloosa environment. Besides, horses have a helluva time with elevators. Bars and clubs can work, but the "stock" EA venues are a bit too urban for Appaloosa. There are some interesting community bars/clubs over in this thread http://www.modthesims.info/showthread.php?t=458730 that, to me at least, fit the town's atmosphere a bit better.

As for parks, well, maybe the kid's park from Generations, as there's no "kid friendly" park in place. OTOH, my sim kids appear (I'm projecting, I don't know if they're happy or not, but the bars say they are, and anyway who knows what really goes on in a sims head) to enjoy hanging out at the horse park and playing with the animals running around.

I guess I take each world for what they are. Appaloosa is about animals, not careers or a lot of nightlife. Bridgeport, which I really like, might be fine for a small dog or cat to live in a household, but bigger animals (dogs or horses) don't work well in an urban environment. I say this from RL experience, so that merely may be the result my own bias which I'm imposing on what is, after all, just a fake world.
