Default how do you run the demo in windowed mode?

Go to upper right corner, select the "..." icon. Select game options, in graphics section, look for the window type dropdown box.

I play it on windowed mode by the way.

You can also just hit ALT+ENTER to switch back & forth between windowed and fullscreen, just like the previous sims games. Well, TS3 could do that at least. Can't remember about TS2.
