Gitaroo Man - Playstation 2
Katamari Damacy - Playstation 2
Star Fox Adventures - Gamecube
Ikaruga - Gamecube
Legacy of Kain: Soul Reaver - Dreamcast
Psychonauts - XBOX
Pretty good list there of games you need to get your hands on. I will say the following though - Conker's & Starfox Adventures are pretty ordinary titles. Conker's is Rare at their worst - base lifeless humour and none of the great level design that characterised other games of theirs such as Banjo-Tooie.
Starfox is a great example of what happens when a game's entire purpose changes partway through development along with the platform the game was being developed for (Originally the game was called Dinosaur Planet and scheduled to appear on the N64). Nothing much of interest in this title, it lakcs a cohesion of design sensibility and relies far too much on collect-a-thons to proceed. It isn't a bad game like Conker's, its just an average title.
If you do have access to a PS2 I would put ICO at the top of the list of the games you need to have played. If you can't find ICO then hunt down Shadow of the Collossus... it is a sort of sequel/prequel to ICO (there is no direct link between the games other than having the same developer, nonetheless both games feature certain themes and design elements that seem unique to the world first portrayed in ICO) and only came out relatively recently. Should still be available in shops.
My list is really quite brief. Working as a games journo means I play a lot of games and tend to get my hands on all the good ones (gotta keep up to date with the latest and greatest ya see? ;)). However there are some that have elluded my grasp:
Silent Hill series (PSX/PS2/Xbox/PC) - I don't know why I never got around to these games, I just didn't. I really do mean to though as the upcoming movie looks like it may have nailed the feel of the games and I wouldn't mind being well versed in the story prior to seeing the film.
Radiant Silvergun (Saturn) - I discovered the wonderful world of Treasure a bit late on in their life with Ikaruga (GCN version, not DC). I never played Mischief Makers, Gunstar Heroes and their other earlier titles. With the release of Gradius V I can authoritively claim these guys are the current masters of the shmup genre. Of course Radiant Silvergun is considered the true jewel in the Treasure crown, it depresses me no end that I will likely never get a chance to play this game.
Panzer Dragoon Saga (Saturn) - I love the world of Panzer Dragoon. It is so well crafted and the thought of an adventure title set in this world excites me no end. Alas, like Radiant Silvergun, it is a rare title and unlikely to ever pass through my hands.
Uplink (PC) - Last year I had the pleasure of reviewing Darwinia. I fell in love with the game, its concept, its blend of RTS and action and its wonderous graphics. The developers were also responsible for a hacker sim called Uplink which was abit of an underground hit. Considering how much fun Darwinia was (and still is) I'm very keen to get my hands on this puppy.

Elprez, you never played the Silent Hill series!?!? ... Ack....*dies*
Sorry, that is just one of my favorite series to play among others of course. But it is at the top of my list.
Anyway, I agree with the prez on Star Fox, I did play the game and I guess I'll say this, you didnt miss much :D
EDIT: Oooo wait I should probably answer the question huh? Well as far as games I missed out on... well I guess I really cant think of any. I try my hardest to get my little hands on them all bwahahahaha :evilnod: Even though it may take me a while, I usually do, wether it be renting borrowing or buying.

Yeah I have to agree with Mr.Prez I haven't played any slient hill games either (I know I going to get poked for this one) because I am so used to Resident evil games now and 2 had me jumping at my seat because it was so scary to me and so exiting.

You need to play Silent Hill 1, 2, 3, and yes even 4. If you have the slightest regret in not playing then you must. They were great, they were disturbing, they were scary, they were fun!
Oh, and no, I dont want to see the movie, it looks to be like they captured a bit too much the feel of the game...... *shudders*... I am not sure I could handle it

Star Fox adventures really isn't that great. I rented it for my Gamecube, and decided not to buy it.
Personally, 9b8ll Id say I prefer tekken to virtua fighters. I like the original tekken game on ps1 more than any of the others :D

As for Final Fantasy X.....that goddamn Chocobo-racing game to get He Who Shall Not be Named's Ultimate Weapon...GOD. I mean, Jesus H. Christ, a time of BELOW Zero? What the **** was Square thinking then?
"Hey! How about this? We actually make them get a NEGATIVE TIME SCORE!"
"That's absolutely evil! And brilliant!"
Easily the most annoying moment in VI, VII, VIII, X, and X-2. Can't speak for the other ones, since I haven't played them enough.
Not necessarily a bad game though. Like Reno, I'll catch holy-**** for this, but I gotta admit, I liked the sequel more. It was just as, if not more, ridiculous, but at least the combat was fun.

Too many no name.
I bought Metroid Primer Echoes and I haven't play it yet.
Some that I've missed are:
Civ series - I just played the demo for Civ IV and I love it, way to short tough.
Final Fantasy Series - This one really hurts, I've played the IV on the SNES and VI or VII but only momentary.
Any exclusive content for PS2

I hope you mean the demo is too short.
I stand by my 10/10. That game is so replayable.

Civ4 rocks. I actually don't have any games I regret not playing since I've played all the ones I want to. Now if there was a list of games we do regret playing... :P
Oh and yes, FFX, below zero.. OMFG I hated that!!! I just gave up.

FFX, OMFG I hated that!!!
:D
Don't ban me! :P
P.S. There were promotional stands for Civ IV floating around Aus for a bit with quotes from my review on there. I always grin seeing stuff like that even though it says nothing about me as a writer... all it says is "Geeze, this guy had nice things to say about us. Let's use quotes from his review." :P

Katamari... basically every one hehe. I got to play the demo the other day and my brain nearly went esplodey... seriously. Now I feel like I need to get my ball big enough to knock down walls and... buy the actual games >.> Interesting note there: The creator of Katamari is now creating playground equipment for children :P *boggles* But its gotta be one of those games I only play while loaded with tons of caffiene and highly sleep deprivated I'm afraid.
And yeah... what ElPres said about ICO :P Amazing game. But I've played it now because of him haha.
Oblivion - I haven't bought it yet and its -killing- me. Must... get... Oblivion.
I'm sure there are others... drawing a blank right now.
ElPres - I have Uplink, hit me up some time and you shall recieve :P

Huzzah! I told ya it was good. :P
Now you need to hunt down Shadow of the Colossus (http://www.us.playstation.com/Content/OGS/SCUS-97472/Site/) which is by the same team and serves as a spiritual sequel/prequel to ICO (There is no direct link established between the games but lots of hints that they exist in the same world).
