You can choose "ignore" on chance cards to not take the risk of the sim getting fired/demoted due to a bad outcome (but they'll also not get any good effects - they're at the top level, so there's not too much of that anyway).
Sims can get fired due to bad job performance, but keep that one up and they should be good. Make sure they go to work in a good mood with needs in green.
Sims don't change their jobs without your knowledge (unless you have mods that lets them do it - I don't know of any unless the new story progression mod does it), so as long as you don't pick a new job for them and they don't get a bad outcome on a chance card, and you keep their job performance up, they should stay in the job until you decide to either change their job, quit their job, or retire them.
