Default Service and Role Sims
Hello all. I'm wondering about the Hidden Traits, Traits, and Skills given to Service and Role Sims. I haven't been able to spawn all of them, so I'm not 100% sure, but I've listed what I think I know and maybe you can help me with any you know.

Services:
Adoption Service - Not sure
Babysitter - Kleptomaniac. Maybe Family Oriented and Charismatic?
Burglar - Burglar? Possibly others?
Butler - Neat, possibly others? Cooking 10, Handiness 10,
Child Protection Worker - Not sure
Dancer - Not sure
Fire Department - Immune to Fire, Pyromaniac. Maybe Brave and Unlucky?
Grim Reaper - Not sure
Maid - Makes no Messes. Maybe Neat, Kleptomaniac, Flirty?
Mail Carriers - Not sure
Mixologist - Not sure
Newspaper Delivery - Not sure
Pizza Man - Pizza Appreciator. Maybe Natural Cook?
Police - Can Apprehend Burglars?
Repairman - Handiness 10
Repo-Man - Not sure
Science Geek - None

Are you asking for suggestions on what to give role and service Sims or are you looking for what the game usually gives them?
If the latter then both the Time Traveller and future residents have the Future Sim hidden trait, which comes, I think, with an additional 10 levels in Advanced Technology.
The Tattoo Artist has 10 levels in the hidden Tattoo skill, the Stylist 10 levels in the hidden Stylist skill.
Bartenders have level 10 in Mixology and Pianists something between 5 and 10 levels in the Piano skill.

There are also some services and roles missing from your list:
Other services are: Newspaper Delivery, Pet Adoption, Animal Care, Grim Reaper, DJ, Magician, Singer, Acrobat, Resort Worker, University Mascot
Other roles are: Food Merchant, Book Merchant, Nectar Merchant, Relic Merchant, Barista, Kissing Booth Attendant, Festival Concession Stand merchants, Waiter/Waitress (they man the ITF food synthesizers on community lots)

This might be an easy way for the Traits. These steps will identify sims in the service pools:
City Hall/Computer>NRaas>MC>Sim>Advance>Traits>Change
In the Criteria section Change - Scroll down to the bottom of the window and select the type of sim you want to look at then select and accept.
The Type of Service window pops up. Select the type of sim and accept.
That brings up the Change window which identifies all the sims in the category you selected. Select the sims you want to look at and accept.
In the Change window the name of the sim is identified along with the listing of all game Traits. Sort by value and it will pull up all the traits the sim has as well as hidden traits if the sim has hidden traits.

What the game usually gives them. For instance, all Maids seem to have Make No Messes, and sometimes it gives Kleptomaniac. Also I edited the original post to include your mentions.

That's true. It might take awhile that way, and would still involve some guesswork.

There is more than one Grim Reaper and they may share some traits, but they're not identical. The Grim Reaper in the game I have open at the moment is a Young Adult with the following traits: Bookworm, Brave, Good Sense of Humor, Inappropriate, Mean Spirited.

Role: Bartender (at Dive Bar) Adult female with the following traits (I would think they vary): Bookworm, Brave, Natural Cook, Unflirty, Virtuoso. Her mixology skill level is 10.

Pizza Delivery 1: Pizza Appreciator Hidden Trait. Regular traits (likely vary): Clumsy, Daredevil, Natural Cook, Neurotic, Unlucky.
Pizza Delivery 2: Pizza Appreciator Hidden Trait. Regular traits: Clumsy, Hopeless Romantic, Neurotic, Slob, Unlucky.

The newspaper delivery children have various traits, no skills, and no hidden traits (of the ones I checked in my game). The only thing that's a given with them that I know of is that they're always Child-age.

I had enough of the Science Geeks constantly clearing picnic baskets from the parks so I don't allow them in most games. I wouldn't be surprised if they have the Neat trait.

If I catch any others during my play sessions, I'll add them to this post.

There is nothing very special about role Sims with regard to traits. Role Sims are hired from the pool of either unemployed residents or homeless Sims. So, the game takes whatever is available and adds some skills if the role objects requires them.

I will try to update your list for role Sims, sorted by EP, and add the criteria residential status, age, traits, skills. Although I have to add that it has been a long time that I played without NRaas Register and so my memory of default behaviour might be sketchy.

The thing with service NPCs is that whatever the creator(s) of a specific world gave them is no indication that these are default things. Initially, for example, maids were always flirty, brave and kleptomaniac. But later EA shipped their worlds with service NPCs that had no traits at all, not even the hidden ones. Although the hidden Can Apprehend Burglars trait is necessary for Police NPCs to be able to catch a burglar. If they don't have it they cannot even enter the lot where a burglary happens.

There may be some patterns though when the game creates new service NPCs:
Maids, Butlers and Bonehilda seem to always come with the Brave trait
The Grim Reaper often has either the Good Sense of Humor or No Sense of Humor trait
The University Mascot is always a high level Jock, and comes with "jocky" traits (Brave, Athletic, Flirty...)
Firefighters seem to always be brave and have either the Immune To Fire or Pyromaniac trait
Babysitters are often slobs and flirty and have either the Dislikes Children or Family Oriented trait

ETA: There's a slightly quicker way to check service NPC traits in MasterController than the one barbarat suggested: Town Hall or Computer/NRaas/MasterController/Sim/Status/Personal/TypeOfService and then select the service(s) from the pup-up list.
Similar for skills: Town Hall or Computer/NRaas/MasterController/Sim/Status/Skill Level/TypeOfService and then select the service(s) from the pup-up list.

I have nothing constructive to add but "pup-up" is a lovely typo and I am very happy to see it.
